Chicken and Dumplings
Ingredients:
- 4 cups low-sodium chicken broth
- 4 cups water
- 2-3 boneless, skinless chicken breasts (about 1 1/2 pounds)
- 1 1/2 T. olive oil
- 2 stalks celery, chopped
- 2 large carrots, chopped
- 1 onion, chopped
- 1 1/2 tsp. table salt (or 3/4 tsp. fine sea salt)
- 1 tsp. dried thyme
- 1/4 tsp. freshly ground black pepper
- 1/2 cup cold water
- 1/4 cup all-purpose flour
- 1/2 cup frozen peas
For the Dumplings:
- 1 cup all-purpose flour
- 2 tsp. baking powder
- 1/2 tsp. table salt
- 1/4 tsp. dried thyme
- 1/2 cup sour cream (reduced fat is fine)
- 1/2 cup milk
- 1 T. vegetable or canola oil
