How to Make a Squid Soup
100 g squid cut into thin strips
2 leeks cut into julienne
100 g of shelled peas
100 g carrots, cut into julienne
50 g of bean sprouts
50 cl of water
2 c. tablespoons olive oil
1/2 c. teaspoon salt
1 c. tablespoons soy sauce
Cook the peas in boiling salted water for 8 minutes and drain.
In a saucepan over low heat, sauté the leeks and cut into julienne strips of squid in olive oil for 1 minute.
Moisten with water to a boil add the remaining ingredients and cook for 5 minutes.
Serve the soup hot calamari accompanied by toasted bread.
